Air France Unveils Its Michelin-Starred Chef’s Business Class Dishes For 1Q 2019

Air France is one of the few airlines that regularly updates us on what it’s offering customers onboard. Most airlines rotate their menus reasonably frequently (especially in premium cabins) but I can’t think of another airline that’s as keen to share what it serves onboard as Air France – I take that as a good thing.

Air France has a stable of Michelin-starred chefs who, individually, help to arrange the airline’s premium cabin meals at various points of the year.

Between January and the end of March 2019 Ann-Sophie Pic (“the world’s most Michelin-starred female chef) is in charge of adding some star quality to the Air France Business Class menu and these are the dishes she has contributed:

January 2019

  • Pollock with creamy black rice, butternut and coconut curry sauce;

  • Creamy lentils served with beetroot and onion pickles.

February 2019

  • Poultry with Tonka bean, voasti polenta and chicken sauce;

  • Beef cheek in a coffee marinade, with celery, chestnut and carrots.

March 2019

  • Guinea fowl and cream of green peas in a black tea sauce;

  • Pollock with creamy black rice, butternut and coconut curry sauce.

These menu items will be available in Business Class cabins on all long-haul flights departing from Paris as well as on the following medium-haul destinations:

“Algiers, Amman, Athens, Bucharest, Casablanca, Catania, Yerevan, Kiev, Marrakech, Moscow, Oran, Rabat, Stockholm, Sofia, St Petersburg, Tel Aviv, Tunis, Warsaw”

In 2019 Air France will be partnering with a total of 4 Michelin-starred chefs for its Business Class menus and we will see Arnaud Lallement (April – June), Guy Martin (July – September) and Michel Roth (October – December) adding their own menu items later in the year.

Bottom Line

I love the fact that Air France takes the food it serves onboard so seriously (I guess that goes hand-in-hand with being the French flag carrier) and, in my experience, the chefs do a good job of remembering that they’re creating food for 30,000ft+ and the crew know how to make serving it onboard look good – both those things go a long way to making the Air France Business Class experience looked as polished as it often does.
